Compressed yeast

A type of baker's yeast commercially available as a moist square cake containing live cells of Saccharomyces cerevisiae combined with a starchy or absorbent paste.


Compared to dry yeast, the compressed yeast is moist and the yeast cells are still active. Hence, compressed yeast is highly perishable.
