Fruit Freeze

Recently, after a severe bout of pointless curiosity, i froze a banana to see what would happen. The banana's skin went slightly darker, and it was frozen solid. However, when i defrosted, it seemed to liquefy, and appeared like it had decayed. After opening the banana, i saw the fruit itself was mushed up, but still edible (i hope). However it tasted (apparently) like the banana from baby food. Why does a fruit behave in this way after freezing, and why won't meat do the same?

So why doesn't this happen to meat or animals when frozen? - or does it, and i have just never frozen a cow

I SAW it. A huge freezer contains a hundred skinned cow hung by the hook :)

Actually Banana gets all mushed up even if you keep it in a damp place for some time!
It gets this fermented taste too!
Actually it tastes better this way!
So it is not that the banana changed because u froze it but because it got damp and thus the mush! LOL ':lol:'
