Potato ageing and catalase activity

After an experiment to investigate catalase activity in old and new potatos I found that old potatos had higher catalase activity. Why is this? Is it due to loss of water in old potatos, degredation of cell membranes etc. What happens to a potato as it ages? Please help!!!
