Introducing new cattle traits into a breeding program

How would you design a breeding program for cattle that allows a new genetically improved breed to be introduced and be successful so more cattle are improved?

What trait are you going for?
AI breed for the trait over generations..

With organisms like bacteria, they usually irradiate them to increase variability, but I don't quite know how you would do that with cattle.

In either case, you'd just basically use artificial selection.
