Biology project for student who will be gone

Help.
I have a student who will be in Africa on a safari until the end of the year. He will be leaving on Friday. Instead of giving him bookwork, I would like to assign a project for him that will be given instead of the test. We are actually studying vertebrates right now, so the timing is perfect.
Does anyone have any ideas on a project?

you could get your student to take pictures of all the vertebrates that he sees and then explain to you why they are vertebrates. tell him to make like a poster or either combine it all into a report

He is a sophomore.
I was definitely thinking about the picture idea, but it might not be challenging enough.
What do you think about classifying them into classes and why? And making it a requirement that he has pictures of amphibians, reptiles, mammals, and birds (probably not fish)?

he could take pictures... and/or maybe write about adaptations of animals to their habitat...

I'm not sure exactly how old sophomore is, coming from England, but I would go past class to at least order level. Class just seems a bit broad. Adaptations is always a good one though.
