hi I have made a test for immobilized enzimes but there are 3 questions that I can not answer if someone can help me I will be very happy

the experiment :

soium alginate + water =stir to dissolve
yeast + sodium alginate =mixture
calcium chloride + water =mixture

after that I make the beads

carry out the benedict test for reducing on 3% sucrose

after that I put the beads in a glass column and fill with 3% sucrose

after that every 5 min take a sample and check it with benedicts test

My questions are :

1Outline a method you could use to identify the product(s) of this reaction -I have written a test with polarimeter but I am not sure

2.How could you test the product to check if it is not contaminated -I have no idea of this answer

3.what enzyme is involved here and what use is this enzyme to yeast

if someone has any Idea I would appreciate some help
