In this time, having some sort of cardiac trouble is very common. I was just wondering if someone has high cholesterol and LDL levels, can some change or precaution in dietary habbits can change that harmful LDL into good HDL

Yes you can have it.....follow the chemistry way..
A saturated fatty acid can be made unsaturated by using strong bases such as Na-ethoxyde. do they wanna drink that for the sake of their big belly???
I can say that the best way is trying to avoid fast processed foods, junk foods and their friends. For the oil, I can say the good one is ALA (omega-3) which can be obtained in cold water fish...so, I think the good starting way is changing meat with fish and followed by vegetables...
Q: Why are chemists great for solving problems?
A: They have all the solutions.
