Whats monodiglyceride

Does anyone know where mono diglycerides come from? I know they're a kind of fat but thats about it. Does it come from an animal or can it also be produced in plants? Which one is used in food products and would they specify?

the common one will be triglycerides which make up about 95% of the lipid in our food. A triglyceride is composed of a molecule of glycerol to which 3 fatty acids are bound. we can also have diglycerides---two fatty acids bound to glycerol. If you read food labels, you will often see mono and diglycerides listed in the ingredients.

Mono- and diglycerides are are added to food to help water and oil stay mixed together. We call that stabilizing an emulsion. Take some cooking oil and por it into a bottle containing water. The oil floats on the top. Now shake the jar. It goes cloudy and there are not two layers. Wait a few minutes and the two layers come back. If we did the same thing but added some mono- or diglyceride before shaking, the two layers would not come back or would take a very long time to come back. Many salad dressings use mono- and diglycerides to mix oil and water this way.

in my country, we get it from palm oil
so, it is definitely from plant
i dont know if it can come from animal fat..
