Plant pigments

hey all,
im doing a chemistry investigation , which has a lot to do with biology, so thats why im posting here. is it possinble to extract the pigment out of a plant/vegetable by putting it ina blender and mixing it with boiling water, then filthering it?
and also, if the filthered "solution" was lest in a beaker, would it loose the properties of the pigments after about 4 to 5 days? and can anyone tell me why?!

it is possible to extract pigments by adding hot water to the plant powdered tissue. about 45 degrees are enough warm. then filter the extract and the pigments will be stuck to the filter paper. but i am not sure that will the filterate will show any specific change after 4-5 days
