How did E.coli evovle so as to fit our retum?
& obviously why only E. coli?

Some E. coli are adapted to our Digestive tract. They are a common bacteria and hence they happened to move a lot into mammals GI tract. Probably helped adaptation, but there is no good answer to that.
For the second question E. coli represent 1% of the Aerobes in our gut, that makes it the most abondant on this category. But aerobes represent 1% of oour total intestinal flora, so there is no "obviously" here
