Saliva needs more time. And you should have plenty of saliva to observe well.
I did the experiment with liver at high school. Results were good.

WHAT experiment? you need an enzyme to work with? what enzyme can you extract from liver?

Extract? You put liver directly into the test tube add some H2O2. thats all. You repeat this in different pH and temperature.
You work with catalase.
