fruit and acetic acid

what is the name of bacteria that change fruit sugar into acetic acid ?

enviroment detail :
oxygen , water , fruit

If this does not help can you provide any more details as to exactly what sugar this organism converts to acetic acid (vinegar)? Fructose, Sucrose, Galactose, etc?

i'm using orange , manggo and banana
so maybe it is fructose

"The fermentation kinetics of acetic acid production from fructose by Clostridium formicoaceticum was studied at pH 7.6 and 37 degreesC"

37 degreesC is too high :( i'm using room temperature

Is this microbe doing a conversion of sucrose/fructose to acetic acid DIRECTLY or does it first convert it to sugar alcohol, then to acetic acid? (I dont think this is the case but I have to ask)

Look into Acetobacter and yeast, then ;) Theyll convert sugar alcohol to acetic acid + h2o

Acetic Acid Bacteria or Acetobactor is the bacteria that changes fruit juices into Acetic Acid.
