What is the role of oxygen in mitochondria?

You mean oxygen is responsible for oxidation? No!

In the process there, O2 as I remember becomes an electron-acceptor and so to complete the entire oxidation process but of course only for the aerobic organisms.

O2 is used in the production of ATP in the electron transport chain process. This is a really great animation, showing the electron transport chain--really amazing. Don't know how unguided mutation accounts for this.
