help me on ripenning physiology of fruit

Now I am studying on fruit ripenning mechanism. However I have not any documents on this field. Could you support me the document or website on this field?

you can use Google search with keywords: fruit acetilene induce (or "fruit ripe" mechanism)

*the key to fruit ripening is the hormone auxin. You will find that grocery stores spray this hormone on fruits to stimulate ripening .

actually they use C2H4 for that...

Can you tell my the merchanism and the physiologycal changes in fruits when they spray C2H4 or some kind of phytohormon?

well they don't spray the ethene, because it is a gas. You mean the cellular transduction pathway? No idea. But i can tell you that each hormone has it's own pathway(quite obvious but still worth mentioning)
