What property, in a polypeptide. decides wheter its secundary structure is alpha helix or beta pleated sheet?

It's the locations of the Carboxyl and Nitrate groups in the chains. They hydrogen bond to each other and form the structure.

biostudent84 means carboxyl and amino groups (not nitrate). But that doesn't answer the question why a helix rather than a sheet.

thats a hard question and its not possible to answer diffenatly. Some aminoacids are said to be for an example helical inducers, like leucine and alanine. proline for an example is often found in hairpins. But there is no rule without exceptions so...

excess proline can cause kinking enhancing beta pleat formation while more no: of polar amino acids can result in h-bonding(intramolecular) to form alpha helix
