What is the positive control and negative control?... The more lactic acid bacteria, the longer the shelf life. My hypothesis is that the higher the sugar yoghurt, the more lactic acid bacteria (preserves yoghurt). I have one yoghurt with high sugar content and another with low sugar. Re: sterilization in microwave ovenI've sterilized jars for home preserves by sealing them with a damp piece of cheesecloth inside. Not a foolproof method, maybe, but there is increased pressured in the jar when steam forms. In any case, the chutney didn't spoil :D
