Pepsin A is alkali labile, with low specificity, cleaving proteins to smaller chains of polypeptides at peptide bonds, especially near phenylalanyl and leucyl residues. Other forms of pepsin are pepsin B and pepsin C.

Re: Derived proteins... proteases. These are enzymes (usually proteins themselves) which snip or chew proteins. Enzymes in the stomach are good examples (e.g. trypsin, pepsin). I don't know what you mean by "simple" proteins- small proteins are usually termed peptides (2-15 amino acids or so), although more ...
