The effect of low temperature on Ascorbic Acid

Hello I was wondering why the ascorbic Acid content of oranges might decrease if the temperature decreases to just above freezing. Without enzyme interaction. (focus on the chemistry) Any thoughts on the topic?

preparation of Carboxymethyllysine (CML)

Hi, Preparation of CML as a major Advanced Glycation Endproducts in the lab is too critical, we usually use BSA and glyoxalic acid, and we add NaCNBH3 to the mixture. Does anyone know why we add NaCNBH3 to prepare CML? Thanks.
