Digestion of protein... (pepsin, trypsin etc.). These enzymes have different specificity (usually hydrolizing after some AA like basic amino acids as Arg and Lys (trypsin) or after hydrophobic amino acids (I think chymotrypsin)) or can differ in the way they do it.
