Genetically engineer starchy plants for biofuel

... in poor soil. I'm thinking developing a type of switchgrass with big fruit, or maybe something with a starchy root. Is it fairly easy to break down starch into sugar and from there into ethanol?

Look into Acetobacter and yeast, then ;) Theyll convert sugar alcohol to acetic acid + h2o

Is this microbe doing a conversion of sucrose/fructose to acetic acid DIRECTLY or does it first convert it to sugar alcohol, then to acetic acid? (I dont think this is the case but I have to ask)
