How is food digested?... maltose by salivary amylase. As I know in Biochemistry, there's alpha and beta amylase in which alpha amylase will degrade amylum into maltose and dextran, while beta amylase will degrade amylum into maltose...now, which one is salivary amylase?is it alpha or beta?
