question about the solubility of ethnol

in fact: when extracting lipids with choloroform, methanol is used to dissolve the apolar lipids in the chloroform to let it dssolve in a water phase. (same effect as ethanol, only a bit better)

Definition of a solution

... (due to the interaction with numerous watermolecules) --> solutions are therefore clear --> the same occurs with non-polar compounds in an apolar solution.

insoluble proteins

insoluble proteins are most of the time transmembrane protein which are apolar and thus not soluble in aqueous solutions and you need to isolate them from the membrane.
