An unsaturated fatty acid containing more than one double or triple bond in the hydrocarbon chain.


Polyunsaturated fatty acids have lower melting point than monounsaturated fatty acids because of their chemical structure. They include the essential fatty acids, omega fatty acids, and linoleic acids. They are found chiefly in fish, seeds, bananas, nuts, and vegetable oils.
