How do vestigial structures provide clues about a species' evolutionary past?

well, they are traces of organs. Knowing the function of those organs, we can imagine what the evolutionary past is...

The best example of human vestigial structures are in the embryonic state. Take a look and you'll see all kinds of clues as to our past.
