How are essential amino acids made?

Hello!
We've all heard of essential amino acids, which can not be synthesised in our own body. My question is, why can't we do that and also how do they come in our food? What biochemical reactions in animals or plants are responsible for that?
I appreciate all of your answers.

Proteins/Aminoacids are responsible for the structure and metabolism of the organisms.
