In the process of making candy, what happens to the substancI put this question in the human biology forums because it relates to proteins and denaturation perhaps?
all i know is that in candy production, sugar+water in room temp = condense solution + put above heat = supersaturated solution. What I don't know is what happens to the protein?how might this affect the protein?
