i think so this video help you about the hydroponics
you can grow hydroponically basically any plant. We're fegularly growing maize or some grains, but as you can see in the video above, you can use it also for growing lettuce or tomatoes. One colleague tried to grow hydroponically even Arabidopsis, but she had some problems due to the nutrients.
That brings us to the second question, which doesn't have simple answer, since every plant needs other nutrients, thus for Arabidopsis is used MS medium, for maize the Hoagland solution and for oat I've used some solution from one book. Anyway, these solutions have usually quite similar composition, but some of the micronutrients may differ and may be required by the plant. For that you should look into some books, whether your plant was grown before and what solution they have used. http://www.biolib.cz/en/main/
Cis or trans? That's what matters.
Hydroponics is planting without soil. The macro and micronutrients needed by your plant is provided by a water solution which you should prepare. Calcium nitrate, Potassium Nitrate, Potassium Orthophosphate, Magnesium Sulfate, FeDTA, a solution with all your micronutrients in their available form, Sodium Nitrate, Sodium Orthophosphate, Calcium Chloride, and Potassium Chloride should be contained in your hydroponic solution. This method is also used in areas where soil is not fertile (e.g. area with dry soil, near deserts). Lettuce and tomatoes are examples of plants that could be grown.
