What happens to the gases inside potato if it was cooked?

I was wondering how i would be able to extract the gases inside a potato, i was told that it would be useful to cook the potato. What happens to the potato to make the gases release?

If you heat the potato it will dessicate and you can collect the gases?

well, I guess the point of such experiment is, that gases change volume with temperature, so if you heat them, the gas increases volume and is released
