Planning an Adaptation Experiment...

I want to do an adaptation experiment.
We've went over adaptations and how animals adapt to the changes in their envirement in my class, and I want to see it. I want to see something adapt right before my eyes. The only problem is is that I'm not sure what to do :/
I know I want to use a fish for this experiment since they're easy to care for and we've got some fish tanks laying around the house. I just have no idea what I'm going to do, or even what breed of fish I'm going to use...
Would anyone like to help me? Or give me some ideas?

What you're talking about would take many generations, and doing it with anything whose generations are at all long will make it tough to do. This is why most of the examples of observed adaptation are either really subtle or in tiny, fast-turnover organisms that many people find confusing or boring.
