Help required in dissecting bones of Partridge and Pheasant

I have a full brace of Partridge and Pheasant. I want to dissect its leg out without harming the bone surface and soft tissues.
I need that leg for CT scanning. If I boil the whole specimen and get rid of flesh and then dissect, is it going to be ok?

As long as you do not worry about your fat problem any more....
I am pretty sure that the link I posted in your earlier post was also discussing how to remove the flesh from the bones.
