limes pleasethis is my first visit in your forum. can you help me? i want to ask if limes have proteolytic activity like pineapples and papain. pls help me...............
Proteolytic???you mean like maing the protein become lysis?
From what I know is lime has a sour taste (low in pH) and this can make some proteins denaturated. If proteolytic...not only limes..our body also have that kind of substances. Example like peptidase can make a protein become amino-acid...(proteolytic right.. Q: Why are chemists great for solving problems?

I think he is asking wether it is ascorbic or citric acid that lowers the pH

Lime - Nutritional Analysis: -Citric acid: 4-8% (depend on genus) -Ascorbic acid: 77mg per 100g ( 0.77%) Another things are: Protein, lipit, fibre, carbohydrate, Ca, Fe, Mg, P, K, Na, Zn, Cu,Vit C, B1, B2, B3, B6, B5, PP,B12, A, Retinol .(certainly water is the most)
