Fermentative microorganisms?Hello,
I'm not a microbiologist but I am a brewer. In recent years there has been a trend in the craft beer industry towards what we call "wild" fermentations, i.e. non-saccharomyces organisms used to ferment beer. The most popular are Brettanomyces yeasts (awesome), Lactobacillus (pretty good) and Pediococcus (blech). These are all organisms garnered from "traditional" brewing - i.e. isolated from Belgain lambic cultures or simply common to brewery environs. My question to you is, are there any other fermentative microorganisms out there other than the above mentioned? Anything the brewing industry may not have happened upon yet? Fungi, yeast, bacterium, whatever. Please bear in mind this will be used in beverage - while beer is by nature of pH, CO2, hop compounds and alcohol a hostile environment to pathogens, I don't want to kill myself or any of my patrons.
