Please Help Me ASAP!! - fruit cells

Does fruit cells continues to ripen even after they have been taken off from the tree. does respiration still occurs? at what point do they start to decay. when the fruit is preserved in oil what happens to the cells? any particular reaction between the cell's chemical and the oil happened ?

Yes, fruit ripens and decays after you pick it up from the tree. The rate of ripening though depends on a lot of factors - type of fruit, condition of fruit when picked (with bruises, infection, etc...), storage conditions. If I remembver it right, release of ethylene plays a vital role in the ripening process.
