All mature cell comes from a stem cell called mesenchym. During the growth of individual, mesenchym will differentiate into various type of cells due to their specializations. Embryogenesis, in blastula period, cell layers divided into ectoderm and entoderm. In gastrula period, there is a new layer bettwen them calaled mesoderm. For instance, cells in ectoderm will differentiate to generate skin and nervous system. Cells in mesoderm will be muscles. Cells in entoderm will build visceral.

I think it's ectoderm, mesoderm and endoderm with a d. From endo-at the inside

Well, think of it like this. At the beginning of the development of an embryo from zygote the cells have all the same structure. As the new organism formes, cells change their structure in order to perform their functions with maximum productivity. This is specialisation. However it comes with a price: the cell can not perform other functions except the one it has modified in order to due best
It's like doing a PhD in let's say, microbiology. You become excellent in microbiology, but forget other things a college student knows like plant and animal taxonomy.
