Help needed to write - Essay Research Interests

Hello everyone..

I have recently completed an MSc (Biomedical Sciences) in UK and am applying for PhD positions in Europe. I noticed that most of the online application portal is composed of research interests essay submission. As of Statement of Purpose, I am aware that you write about your previous academics and current research interests and why you want to pursue a PhD and particularly about what interests you in the program that you're applying for. I surfed internet for research interests essay but I'm quite confused on the structure as few examples that I've seen looks like a research proposal with references!!

Could someone please advise me on how to begin such an essay and how it should go on? I sorta understand that I should talk bout the research field I'm interested in and the reasons, my relevant research experience and future goals.But for one of the application,
I have to write research interests essay and research experience separately! So I'm just wondering if I have to relate my research interests with my experience in the essay or Should I just talk about how I developed an interest in the particular field?

I have chosen two areas: Molecular medicine and Cell biology as my preferred field. So, should I structure the essay as I am interested in both areas equally? And how can I persuade the assessor so as he/she considers me for both the areas?

P.S. Apologies, if am asking too much questions lol! Am really struck!
