AmylaseNot too sure if this is in the right forum - sorry if it isn't...
What bond does Amylase break when it catalyses the hydrolysis of starch to maltose? I've put down 'hydrogen bond' but it's a complete guess so any help would be much appreciated If you try to fail, and succeed, which have you done?
i'm guessing it breaks the carbon-carbon covalent bond between amylose and amylopectin
