Rate of organic matter decay, please help!

Hi guys, i'm just about to start shooting a time-lapse music video in which the subjects are a pigs head, mostly soft fruits and flowers. I'm shooting on expensive 35mm film, over a 6-8 week period (1800 individual frames), so I really can't afford to shoot any unnecessary shots (ie where not much change occurs since the previous shot).

So the question is: Does anyone know what the rate of decay is for such organic matter if one were to plot it on a graph?

I'm guessing it follows an s-curve but that's a stab in the dark so I would be extremely thankful if anyone out there has any clue!

you can always speed it up with little heat. Why don't you try it once without the film and then you will know exactly how it behaves.
