Whats a good Enzyme for...

I'm in grade 12 doing a project on enzymes and i'm doing the topic of ...

"Behaviour of an enzyme when temperature optimum is exceeded (denaturation)"

So does anyone have an idea which enzyme is good for this?

Any specific enzymes I got a couple. wanna recommend me which to do:
amylase
glucose oxidase
Bacillus Amyloliquefaciens α-amylase

Information on denaturation of enzymes is hard to come across
