transform xy-data to xyz-data

I do have a data set for albumine and calcium (n=7000). I would like to transform it to xyz-data for making a 3D-mesh plot. I'm using SigmPlot. Does anyone have suggestion how to generate z-data?

That is a strange question.

Why do you want to represent your data in 3D if you do not know what is the 3rd dimension you can use?
One is supposed to adapt the graph shown to represent the data to the data at hand, not to try to fit data to a cool kind of graph.

Now if we admit that you have a good reason to do that, and considering what we know about you dataset (not much) I guess that the only z dimension that you have is the number of samples for each particular (X,Y) coordinates, but that will make sense only if there are more than one of each pair.
