Is this right?

amphipathic: a molecule in which there is a difference in water solubility between one end and the other owing to differences in polarity.

Pretty much right. One end of the molecule is water liking (Polar), other end is not liking water (Non polar).

not necessarily ends. You have polar and nonpolar domain
