Does anyone know where I can find information about how vegetation changes with increasing altitude (going up a mountain) and with increasing latitude (going from the Equator to the North Pole)?

I think you really need to do some primary research first. Well, why not surf the net about that, there's lot of info there. Really that the type of vegetation is affected by such factors that you mentioned earlier.
